HAM - MUSHROOM SQUARES 
1 1/2 c. chopped onion
1 c. chopped celery
1/2 c. chopped green pepper
1 (4 oz.) can mushrooms (stems and pieces), drained
2 tbsp. butter
2 c. Bisquick baking mix
3/4 c. milk
2 c. cut up cooked ham, chicken, or beef
1/4 c. dairy sour cream
1 egg
1 tsp. salt
1/4 tsp. pepper
1 egg

Heat oven to 400 degrees. Grease 9 x 9 x 2 inch pan. Cook and stir onion, celery, green pepper, and mushrooms in butter until tender. Mix Bisquick, milk, and 1 egg together. Spread in pan. Spread onion mixture over ham. Mix sour cream, 1 egg, salt, and pepper together; pour over mixture. Bake, uncovered, until set and golden brown, 30 to 35 minutes. 9 servings.
