CHICKEN BROCCOLI CASSEROLE 
4 to 6 chicken breasts
2 bunch broccoli
1 can cream of chicken soup
1 c. mayonnaise
1 tsp. curry
2 c. crushed Ritz crackers
2 tbsp. butter
2 c. shredded cheese

Boil chicken breasts 20 minutes. Boil broccoli until just done, 5 to 10 minutes. Mix soup, mayonnaise and curry. Place cooked broccoli on bottom of casserole dish, flowers out. Pull meat off chicken breasts and place on top of broccoli. Pour soup and mayonnaise mixture on. Mix Ritz crackers with melted butter and place on top of casserole. Cover with shredded cheese. Bake 30 minutes at 350 degrees. Or, best when refrigerated for awhile, even overnight before baking.
