CREAM OF BROCCOLI SOUP | |
1 c. water (or can use any type broth) 1 pkg. frozen broccoli (OR can use fresh finely chopped broccoli which is better) 2 c. milk 2 c. Velveeta cheese (cut into sm. squares) 1/2 c. all-purpose flour 1 c. half & half Croutons for garnish, if desired Can use 2 bouillon cubes (chicken, beef or whatever) in the water if you don't have any broth (if you want that is). In large saucepan, cook broccoli in 1 cup water. DO NOT DRAIN. Assemble blender, put in milk, cheese cubes and flour. Cover and push grind. Add mixture to broccoli. Add half and half to broccoli. Cook, stirring frequently, over medium heat until hot and mixture thickens. Serve garnished with croutons. Makes 6 servings. |
