VEGETABLE CASSEROLE 
1 lb. Velveeta cheese
1 (20 oz.) bag frozen cauliflower
1 (20 oz.) bag frozen mixed vegetables
1 stack Ritz crackers, crushed
1 stick butter plus 2 tbsp.

Boil cauliflower and vegetables until crisp but tender. Put in 9x13 baking dish. Salt and pepper to taste. Add 2 tablespoons butter. Cube Velveeta over vegetables. Mix crackers with stick of melted butter. Sprinkle over top. Bake at 350 degrees for 30 minutes.
