DATE COOKIES 
1 c. shortening (Crisco)
1 c. sugar
1/2 c. sour milk* or buttermilk
1 tsp. baking soda
1 1/2 c. quick oats
1 3/4 c. all-purpose flour
1 pkg. dates, cut fine

Mix shortening and sugar. Mix quick oats and flour.

Cook dates in a little water. Add 1/2 cup sugar (nut meats, if desired). Flavor with vanilla. Roll dough as thin as you can (work with flour when rolling). Cut with round cookie cutter. Put 2 cookies together with date mixture in between (seal edges).

Bake at 400°F for 8 to 10 minutes.

Note: To make sour milk, add 1/2 tbsp. vinegar to 1/2 c. regular milk.
