SCRUMPTIOUS CHOCOLATE CARAMEL

CRUST:

1 c. flour
1/3 c. sugar
1/2 c. butter, softened

FILLING:

1/2 c. sugar
1/4 c. crunchy peanut butter
1/2 c. light corn syrup
2 eggs
1/4 tsp. salt
1/2 c. flaked coconut
1/2 c. semi-sweet chocolate chips

Preheat oven to 350 degrees. Use 9" square pan or 11" x 7 1/2" pan.

In small bowl combine crust ingredients. Beat at low speed, scrape bowl often until mixture is crumbly, 1 to 2 minutes. Press on bottom of greased 9" square pan. Bake 12 to 17 minutes until edges are brown.

Meanwhile, in the same bowl, combine all filling ingredients except coconut and chocolate chips. Beat at low speed, scrape bowl often for 1 to 2 minutes. Stir in coconut and chips. Pour over crust, bake for 20 to 30 minutes or until filling is set and is golden brown. Cool then cut into 1 1/2" squares.
