CAROLE'S CIDER JELLY 
7 (8 oz.) jelly glasses
Paraffin
4 c. apple cider
1 pkg. powdered fruit pectin
5 c. sugar
1/2 c. apple brandy

Wash glasses in hot, soapy water and rinse well. Sterilize glasses and keep hot. Melt paraffin over double boiler. Immediately before starting the jelly drain glasses on dry towel.

In large Dutch oven mix apple cider and pectin, over high heat, heat to a boil, boil 1 minute longer after adding the sugar. Make sure it comes to a full rolling boil. Remove from heat, skim foam, and add apple brandy. Ladle into jars and seal thoroughly with paraffin.
