BAKED CURRIED ZUCCHINI 
1 egg
1 tsp. salt
1/4 tsp. pepper
1 c. flour
1 tsp. curry powder
3 med. zucchini, cut into 1/4 inch slices

Preheat oven to 400 degrees. Generously grease baking sheet. Beat egg well in small bowl; set aside. Combine flour, salt, curry and pepper in shallow dish. Dip zucchini in egg, roll in seasoned flour, covering completely. Arrange zucchini on prepared sheet. Sprinkle generously with olive oil. Bake until crisp and golden brown, turning once, about 20 minutes. Drain excess liquid. Serve.
