GRAHAM CRACKER PIE 
CRUST:

16 graham crackers
1/4 c. butter, melted
1/4 c. sugar

FILLING:

1/3 c. flour
2/3 c. sugar
1/4 tsp. salt
2 c. milk, scalded
3 egg yolks, slightly beaten
2 tbsp. butter
1/2 tsp. vanilla

TOPPING:

Either slightly sweetened whipped cream or meringue.

FILLING: Mix flour, sugar and salt. Gradually add milk and cook until thick, stirring constantly. Add small amount of hot milk mixture to egg yolks and add that to the remaining hot mixture and cook 2 minutes. Add butter and vanilla.

Either top with sweetened whipped cream and a little of the crumb mixture (which you have reserved) or a meringue.

CRUST: Mix crushed cracker crumbs (approximately 1 1/3 cups), sugar and melted butter, press into 9" pie plate and bake at 325 degrees for approximately 10 minutes. Cool before adding the filling.
