OATMEAL BUTTERMILK MUFFINS 
1 c. quick cooking oatmeal
1 c. buttermilk
1 egg
1/2 c. white flour
1/2 c. whole wheat flour
1/2 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 c. oil

Soak oatmeal in buttermilk for 1 hour. Add egg; beat well with mixer. Add sugar and mix well. Add the other ingredients and bake in greased muffin tins in a 400 degree oven for 15-20 minutes.
