BAKED CHEESE GRITS 
6 c. water
1 1/2 c. uncooked regular grits
4 c. (1 lb.) shredded med. & sharp cheddar cheese, divided
2 eggs, beaten
2 tsp. salt
1/2 c. butter

Combine water and salt, bring to a boil. Stir in grits; cook until done following package directions. Remove from heat. Add butter and cheese. Stir until completely melted. Add a small amount of hot grits to eggs, stirring well, add to remaining grits. Pour in greased baking dish. Bake at 350 degrees for 45 minutes.
