NEW POTATO AND CHEESE CASSEROLE 
1 lb. new potatoes
5 slices bacon, fried and crumbled
1 sm. onion, chopped
1 c. Cheddar cheese, grated
5 tbsp. melted butter
Paprika
Salt and pepper

Cook potatoes until tender. Run under cold water and drain. Thinly slice potatoes - do not peel. Saute onion until tender. Place 1/2 of the potatoes into a greased 2 quart casserole. Sprinkle with salt and pepper to taste and 1/2 of the onion, bacon and cheese. Repeat with remaining ingredients. Pour melted butter over casserole and sprinkle with paprika (may do ahead to this point and refrigerate).

To serve: Bake at 350 degrees for 20 minutes.
