CHEESE AND POTATO CASSEROLE 
3 c. diced, cooked potatoes
1 1/2 tbsp. butter
3 tbsp. all-purpose flour
1 tsp. salt
2 c. hot milk
1 1/2 c. shredded cheese
2 tbsp. dry bread crumbs
1 tsp. melted butter

Place potatoes in baking pan or casserole, melt the butter, blend in flour and salt, add milk and cook until thickened, stirring constantly. Add cheese and blend. Pour cheese sauce over potato mixture. Bake at 350 degrees (moderate oven) for 30 minutes or until brown. 6 servings.
