JAM CAKE 
2 c. sugar
1 c. shortening
3 eggs
1 c. buttermilk
1 c. berry jam
3 c. sifted flour
1 tsp. baking soda
1 c. chopped nuts
1 c. raisins
1 c. ground coconut
1 lg. apple, grated
Chopped dates (optional)

Cream sugar and shortening; add eggs and beat well. Combine buttermilk and jam; add alternately with sifted flour and soda; beat well. Add nuts, fruits and coconut; stir until well distributed through batter. Bake in three 9 inch layer pans for 30-40 minutes at 350 degrees.

FILLING:

2 c. sugar
2 tbsp. flour
1 1/2 c. sweet milk
1 c. butter
1 c. chopped nuts
1 c. chopped raisins
1 c. grated coconut
1 c. grated apples

Mix sugar and flour together; add milk and butter and cook until thick, stirring occasionally. Remove from heat; add nuts, fruit and coconut. Spread between layers, on top and sides of cake. Decorate with maraschino cherries, if desired.
