BUTTERMILK CRACKLING CORN BREAD 
1 c. yellow corn meal
1 c. all-purpose flour
4 tsp. baking powder
2 tbsp. sugar
1/2 tsp. salt
1 beaten egg
1 c. buttermilk
1/4 vegetable oil

Mix first 5 ingredients (corn meal, flour, baking powder, sugar and salt). Combine egg, buttermilk and oil, then stir into dry ingredients. Pour into a heated well-greased iron skillet.

Bake at 425°F for 20 to 25 minutes.
