SOY SAUCE CHICKEN 
1 roasting chicken (about 3 lbs.)
1 c. soy sauce
1 c. water
1/2 c. brown sugar
1 c. cooking sherry
4 stalks scallions, chopped

Clean and dry the chicken. Bring the soy sauce, water, brown sugar, cooking sherry and scallions to boil. Put the chicken in the boiling liquid. Cover and cook over moderate heat for 35-40 minutes, turning the chicken once or twice to brown it evenly. Remove the chicken from sauce and cool. Just before serving, chop it into small pieces or bone and slice it. Serve the soy sauce mixture with it. Serves 4.
