VERMONT TURKEY LOAF 
1/2 c. chopped onions
1/2 c. chopped carrots
1/2 c. chopped mushrooms
1/2 c. oatmeal
3/4 lb. ground turkey
Salt and pepper to taste

FOR GLAZE MIX:

2 tbsp. maple syrup
2 tsp. mustard (prepared)

Saute onions and carrots, about 5 minutes. Add mushrooms and saute 2 minutes. Mix turkey, oatmeal, vegetables and salt and pepper together and shape into small loaf. Place in foil lined baking dish and bake about 20 minutes in a preheated 375 degree oven.

Mix maple syrup and mustard together. Remove turkey loaf from oven and poke several holes in it with a skewer. Spoon glaze over loaf and return to oven and bake about 10 more minutes.
