GINGER ROLL OUT COOKIES 
1 1/2 c. shortening
1/2 c. molasses
1 egg, beaten
1/2 tsp. baking soda
1/2 tsp. ginger
1/2 c. sugar
1/2 tsp. vanilla
3 c. flour
1/2 tsp. cinnamon
1/4 tsp. salt
2 tsp. vinegar

Bring shortening, sugar, molasses, vanilla, and vinegar to a boil. Cool; add egg. Sift dry ingredients and add to mixture. Mix well and chill. Roll, cut out, and bake at 375 degrees for 12 minutes.
