GREEK SALAD 
1 green bell pepper, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 unpeeled cucumber, sliced
2 tbsp. Lemon juice
3 tbsp. Red wine vinegar
1/4 tsp. Dried oregano
4 oz. Feta cheese

Mix peppers and cucumber in bowl. Add lemon juice, vinegar, and oregano. Mix well. Cover and marinate overnight. Toss well, just before serving and top with crumbled feta cheese. 8 servings.
