EASY GREEK SALAD 
6 leaves romaine lettuce, torn into 1 1/2-inch pieces
1 cucumber, peeled and sliced
1 tomato, chopped
1/2 c. sliced red onion
1 oz. Feta cheese, crumbled
2 tbsp. extra virgin olive oil
2 tbsp. lemon juice
1 tsp. dried oregano leaves
1/2 tsp. salt

Combine lettuce, cucumber, tomato, onion and cheese in a large serving bowl. Whisk together oil, lemon juice, oregano and salt in a small bowl. Pour over lettuce mixture ; toss until coated. Serve immediately.

Makes 6 servings.
