PEANUT BUTTER CRISPS 
1 c. butter (very soft)
1 c. creamy or chunk style peanut butter
1 c. firmly packed brown sugar
1/2 c. granulated sugar
2 eggs
1 tsp. vanilla
2 1/2 c. Quaker Oats (quick or old-fashioned, uncooked)
1 c. all-purpose flour
2 tsp. baking soda
1/4 tsp. salt (optional)
12 oz. pkg. chocolate chips (optional)

Heat oven to 350 degrees. In large bowl, beat together softened butter, peanut butter and sugars; blend in eggs and vanilla. In medium bowl, combine oats, flour, soda and salt. Add to sugar mixture, mixing well. Drop on cookie sheet by rounded teaspoonfuls. Bake about 10 minutes or until edges are golden brown. Cool 1 minute on cookie sheet; remove to wire cooling rack. Makes about 7 dozen.
