BROILED PEACHES FLAMBE 
8 peach halves
1/2 c. packed light brown sugar
8 dots of butter
1/2 c. brandy
Ice cream

Arrange peach halves cut side up in oven-proof dish. Place 1 tablespoon brown sugar and 1 dot of butter in center of each. Preheat broiler. Broil 3 inches from heat source until sugar melts and peaches are heated through. Heat brandy in saucepan. Spoon ice cream into serving dishes. Pour hot brandy over peaches; ignite. Spoon over ice cream. Serve immediately. Yield: 8 servings.
