"BROWNIE"'S BROWNIES | |
4 oz. unsweetened chocolate 4 oz. (1 stick) unsalted butter 2 tsp. vanilla extract 1/2 tsp. salt 2 c. granulated sugar 4 eggs, large 1 c. sifted all purpose flour 8 oz. (generous 2 cups) walnuts, broken into large pieces Adjust a rack one third up from the bottom of oven and preheat to 350 degrees. Line a 13 x 9 inch pan with aluminum foil. To butter the foil, place butter in pan and place pan in the oven to melt butter, brush with pastry brush. Melt the chocolate in the top of a small double boiler, then remove top of double boiler and set aside. In the large bowl of an electric mixer, beat the butter until it is soft. Add the vanilla, salt and sugar and beat well. Add the eggs one at a time, scraping the bowl with a spatula and beating until incorporated after each addition. Add the melted chocolate, beat until incorporated. On low speed add the flour and beat only until smooth. Stir in the nuts. Spread in prepared pan and smooth the top. Bake for 30 to 33 minutes until a toothpick inserted gently in the middle comes out almost, but not completely clean; there should be a few specks of moist brownie clinging to the toothpick. DO NOT OVERBAKE! Cool to room temperature in the pan. Turn pan over onto clean cookie sheet, remove foil, then turn over again right side up. It is best to chill before cutting. Makes 16 monster brownies or 32 normal brownies! |
