MUSHROOM CAPS 
24 med. size mushroom caps
1/2 c. finely chopped onion
1 lb. finely chopped mushrooms
1/2 stick butter
2 tbsp. flour
1 c. heavy cream
1/2 tsp. salt
1/2 tsp. cayenne pepper
2 tbsp. parsley
2 tbsp. chopped chives
1/2 tsp. lemon juice
Parmesan cheese

Melt butter; add chopped mushrooms and onions. Simmer slowly and add flour and cream. Then stir in remaining ingredients except cheese (and mushroom caps). Cook 5 or 10 minutes. Fill mushroom caps and sprinkle with cheese. Place on cookie sheet and bake for 15 minutes at 350 degrees.
