OATMEAL-BUTTERMILK MUFFINS 
1/3 c. shortening
1/2 c. brown sugar
1 egg
1 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 c. oatmeal (uncooked)
1 c. buttermilk

Mix buttermilk and oatmeal together and let stand 1 hour (or overnight to save time). Mix shortening, brown sugar and egg. Add flour, baking powder and baking soda. Then add oatmeal-buttermilk mixture. Mix well. Grease muffin pan and bake at 400 degrees for 10-15 minutes. Makes 12 muffins.
