ZUCCHINI SOUP 
1 tbsp. butter
1 sm. onion, chopped
1 tbsp. oil
6 c. chicken broth
6 med. zucchini, sliced (not peeled)
Basil to taste
Tarragon to taste
Thyme to taste
Oregano to taste
Pepper to taste

Heat onion and butter and oil in a soup pot. Saute until soft. Add the rest of the ingredients and cook until soft (in a covered pot) for 15 to 25 minutes. Then put small portions of the soup in blender until smooth. Can serve hot or cold. (It can be frozen.) This amount serves 4 to 6.
