NUTTY BANANA FUDGE BARS 
2/3 c. butter, sliced
2 tsp. vanilla
2 1/2 c. Quaker Oats
1/2 c. brown sugar
1 lg. ripe banana, thinly sliced
1 c. semi sweet chocolate chips
1/2 c. chunky peanut butter

Place sliced butter in a medium size glass mixing bowl and microwave, uncovered on High for 1 minute or until melted. Once melted, add vanilla extract, Quaker Oats and the brown sugar.

Microwave, uncovered on High for 2 minutes or until brown sugar is melted. Stir very well. Fill a 3/4 cup measuring cup with the oat mixture and set it aside. Take the remaining mixture and press it into the bottom of a 9" glass baking dish and cover with banana slices.

Place the chocolate chips and the peanut butter in a small glass bowl. Microwave, uncovered on High for 2 to 3 minutes, stirring well every minute until chips and peanut butter are melted.

Pour melted chocolate mixture over bananas and crust. Crumble the reserved oat mixture over the chocolate, pressing it down lightly with your hand. Refrigerate for 2 hours before cutting into 24 bars. Store any leftovers in the refrigerator.

NOTE: These are delicious, tasting somewhat like an ice box cake.

Since microwave ovens vary in power, you may need to adjust your cooking time.
