OVEN FRIED CHICKEN 
1/4 c. bread crumbs
2 tsp. chili powder
1/4 c. milk
4 tbsp. melted butter
1/4 c. cornmeal
1/2 tsp. salt
1 cut up fryer (8 pieces)

Combine all ingredients except milk and butter. Dip chicken in milk, then into cornmeal mixture and put into a long baking dish. Pour melted butter over the chicken and bake uncovered at 375 degrees for 40 minutes or until fork tender.

I have used this recipe with skinned, boned pieces of chicken an lowered my oven temperature to 325 to 350 degrees cooking until fork tender.
