RICE SUZANNE 
1 lb. ground beef
1 can Spanish rice
4 oz. cheddar cheese
Tortilla chips

Brown the ground beef; drain well. Return the ground beef to the skillet and add the rice. Simmer 5 minutes and top with cheese slices. Continue simmering until the cheese melts. Serve immediately with the tortilla chips. This recipe is good to make in advance (without the cheese) and freeze. Heat in the microwave until hot and then add the cheese.

Since microwave ovens vary in power, you may need to adjust your cooking time.
