SWEET & SOUR PORK 
3 lbs. boneless pork
2 tbsp. butter
1 (20 oz.) can pineapple chunks
12 red candied cherries
3/4 c. water
1/4 c. vinegar
1 tbsp. soy sauce
1/4 c. packed brown sugar
1/2 tsp. salt
2 tbsp. cornstarch
2 tbsp. water
1 sm. thinly sliced onion
1 green pepper sliced in strips
1 1/2 c. rice

Cut meat into strips and brown lightly in butter. Mix juice from pineapple with water, vinegar, soy sauce, brown sugar and salt. Pour over meat, cover, simmer 1 hour. Combine cornstarch with 2 tablespoons water; add to meat and stir until thick. Add pineapple chunks, onion, green pepper and cherries. Cover and simmer 10 to 15 minutes longer. Serve over rice.
