APPLE MUFFINS 
1/2 to 3/4 c. honey
1 c. oil
4 eggs
2 1/2 c. whole wheat flour
2 tsp. baking powder
1 tsp. allspice
1 tsp. nutmeg
1 tsp. cinnamon
1/2 c. non-instant dry milk powder
1 3/4 c. grated apple, including peel (approximately 2 lg. apples)
1 tsp. vanilla
1 c. raisins and chopped nuts (optional)

Beat the honey, oil, and eggs. Mix dry ingredients. Add to honey mixture. Stir well. Add and fold together the apple and vanilla, and the raisins and nuts. Bake at 400 degrees for 12 to 15 minutes. Yield: 24 muffins.
