CAJUN SHRIMP GUMBO 
1 (10 oz.) pkg. okra, thawed
3 tsp. vegetable oil
1 c. chopped onion
1/2 c. chopped celery
2 cloves garlic, minced
1 (8 oz.) can tomatoes
3 c. water
1/2 tsp. salt
1/2 tsp. pepper
1 lb. shelled, deveined frozen shrimp, thawed

Cut okra into 1/2-inch pieces, place oil in a large non-stick skillet; add okra and cook, stirring occasionally, until liquid from okra evaporates. Remove okra from pan and set aside. Add onion, celery and garlic to pan. Cook for 5 minutes, stirring occasionally. Add tomatoes with juice, water, salt, pepper and okra. Simmer for 1 hour, uncovered, stirring occasionally. Stir in shrimp and simmer until shrimp is heated through (do not overcook).
