CAJUN SHRIMP GUMBO 
2 lb. peeled shrimp (I use 3-4 lb.)
1 lb. flaked crabmeat (I use 2 sm. cans)
1/3 c. flour
1/3 c. liquid vegetable oil
2 c. chopped onions (I use 1 c.)
2 c. chopped celery (I use 1 c.)
1 c. chopped bell pepper (I use 2 med. peppers)
1 pkg. (10 oz.) frozen cut okra
1 (8 oz.) can tomato sauce
1/4 c. chopped fresh parsley, optional
1 (13 oz.) chicken broth
3 bay leaves
2 tbsp. Worcestershire sauce
1 tbsp. thyme
1 tbsp. Kitchen Bouquet
1 tsp. each garlic salt & pepper
Salt to taste
Liquid hot pepper sauce to taste
1 pkg. Echrich smoked sausage

Make Roux: Heat oil and add flour. Add tomato sauce and equal can of water, broth and seasonings. Add vegetables except okra. Slow cook until vegetables tender. Add crabmeat, sliced sausage and continue cooking. Add water if needed. Add shrimp (other recipe called for raw shrimp, I cook mine separately and then add, its faster). Add okra last and stir gently so as to not break okra. Serve over rice. Delicioso!
