MAPLE BUTTERNUT PIE | |
3/4 c. maple syrup 3 egg yolks, beaten 1/2 tsp. salt 2 tbsp. gelatin 1/2 c. butternut meats 1/4 c. cold water 3 egg whites, beaten 3 tbsp. sugar 1/2 c. whipped cream Heat syrup in double boiler. Add egg yolks and cook until mixture thickens. Add salt. Soak gelatin in cold water 5 minutes and set over hot water until it dissolves. Add to first mixture. Cool. Beat egg whites until frothy, add sugar and beat until stiff but not dry. Fold in whipped cream. When first mixture begins to set, fold in egg and cream. Pour into baked pie shell and arrange butternuts over top. Keep refrigerated until ready to serve. "Little House" |
