SELF ICED SPICE CAKE 
3 c. applesauce (divided)
1/3 c. cinnamon candies
1 can flaked coconut (small)
1/4 c. sugar
1/4 c. melted butter
1 Spice cake mix
Whipped cream, optional

Slowly cook 2 cups applesauce to reduce liquid so that there is 1 1/2 cups applesauce remaining. Add candies and stir until dissolved, add coconut, sugar and butter. Spread in greased 9 x 13 inch pan. Make cake according to directions on package, using 1 cup applesauce in place of water called for in the mix directions. Use eggs if mix calls for them. Pour batter over applesauce mixture in pan. Bake at 350 degrees for 55 minutes. Cool 10 minutes, remove from pan, if so, remove and spread on cake. Before serving, add a spoonful of whipped cream onto each piece of cake.
