PUMPKIN COOKIES 
1 c. sugar
1 c. canned pumpkin
1/2 c. shortening
1 tbsp. grated orange peel
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. salt
1/2 c. raisins (optional)
1/2 c. chopped nuts (optional)
Light brown glaze for frosting (recipe is in the Soup, Salads and Sauces section of this cookbook)

Mix sugar, pumpkin, shortening and orange peel. Stir in flour, baking powder, baking soda, cinnamon and salt.Stir in raisins and/or nuts. Drop by teaspoonful onto ungreased cookie sheet (they do not spread when baking).

Bake 8 to 10 minutes at 375°F. Immediately remove from cookie sheet. Cool. Lay cookies on waxed paper and spread with light brown glaze.

Makes 4 doz. cookies.
