PORCUPINES 
1 lb. ground beef or turkey
1/2 c. bread crumbs
1 egg
3/4 tsp. salt
1/4 tsp. paprika
2 tbsp. chopped green pepper

Combine all ingredients, make into balls and press into flat cakes. Take 1/4 cup raw rice and roll flat cakes lightly into raw rice. Heat in a heavy pot unthickened tomato sauce (recipe follows). Add 1 teaspoon chili powder. Add meat cakes, cover the pot and simmer 45 minutes.

UNTHICKENED TOMATO SAUCE:

4 c. canned tomatoes or 6 large fresh tomatoes
1 sprig thyme, basil or tarragon
1 tsp. salt
1/8 tsp. pepper
1 tsp. sugar

Cook sauce gently, uncovered until thick, for about 45 minutes. Add seasoning if needed. Will keep for several days.
