CHICKEN SAUCE PIQUANT 
1 stewing hen, disjointed
Salt and pepper to taste
Fat
5 lg. onions, chopped
2 green peppers, chopped
1 lg. can tomato sauce
1/2 c. minced parsley
1 tbsp. instant flour

Season hen with salt and pepper. Heat 3 tablespoons fat in skillet. Brown hen well. Add onions and green pepper; saute until limp. Stir in tomato sauce, 1/2 cup water and parsley. Simmer until hen is tender. Add flour stirring constantly, until thickened. Serve over rice. 6 to 8 servings.
