PEANUT BUTTER BALLS (BUCKEYES) | |
3 c. powdered sugar replacement 1/2 c. butter, softened 16 oz. peanut butter 1/2 bag semi sweet chocolate chips 2/3 - 1 block household wax Make powdered sugar replacement by combining 2 cups non fat dry milk; 2 cups cornstarch and about 22 packets of Equal, artificial sweetener. Combine a small amount of each of these ingredients in a blender at a time, until well mixed. Combine powdered sugar replacement, butter and peanut butter in a bowl. Chill. Roll into balls. Chill until hard. (Putting them in the freezer for a short while may help.) Melt chocolate and wax in a double boiler. Using a toothpick, dip peanut butter balls into chocolate and cool on wax paper. Makes about 6 dozen. These can be frozen. Although these are not totally sugar free, they should not greatly affect people with diabetes, unless they eat very large quantities. |
