LEMON MERINGUE PIE 
Vanilla wafer cookies
Juice of 3 lemons
3 eggs, separated
3 tbsp. sugar
1 tsp. vanilla
1 (14 oz.) can condensed milk
4 tsp. sugar

Preheat oven at 350 degrees. Line 9" pie plate with vanilla wafer crumbs and the edge with whole cookies standing on edge.

Combine lemon juice, 3 tablespoons sugar, vanilla and milk. Mix well and pour into crust.

In a small bowl beat egg whites until thick. Add 4 teaspoons sugar gradually until it forms stiff peaks. Pour over pie and bake about 10 minutes or until lightly browned. Refrigerate before serving.
