TURKEY TETRAZZINI 
2 1/2 c. shredded turkey
3 tbsp. butter
2 tbsp. flour
1 1/2 c. chicken stock
Tabasco sauce
Salt and pepper
1 tbsp. sherry
2 tbsp. heavy cream
1/4 c. sliced almonds
1/2 lb. mushrooms, slice and saute'
1/2 lb. linguini
1/4 lb. parmesan cheese
1 tbsp. butter

Preheat oven to 375 degrees. In large saucepan, melt butter, stirring briskly. Add flour and salt. Stir this mixture several minutes then stir in stock and a couple of squirts of Tabasco sauce. Season to taste and cook over low heat while you saute' mushrooms. Cook linguini according to package directions. Add sherry cream, almonds, mushrooms and turkey to sauce. Cook until turkey is heated. Drain linguini and place in buttered casserole. Pour sauce over linguini and sprinkle with cheese and dots of butter. Place in oven to bake for 20 to 30 minutes. Serve immediately.
