SUMMER SQUASH CASSEROLE 
2 c. sliced squash or zucchini
1 (8 oz.) Mozzarella cheese
1 c. sliced onion
1 c. shredded carrots
1 c. sour cream
1 can cream of chicken soup
1/2 c. butter
8 oz. seasoned bread stuffing

Boil squash and onion 5 minutes. In bowl combine sour cream, carrots soup. Add butter to bread stuffing. In dish, spread half stuffing mixture in bottom then add squash or zucchini.

Top with other half of stuffing. Bake at 350 degrees for 35 minutes.
