MINI MEAT LOAVES 
2 lb. ground beef
1/4 c. dry bread crumbs
1 egg, slightly beaten
1/4 c. finely chopped onion
1/4 tsp. pepper
1 can tomato soup
2 tbsp. shortening
2 tbsp. (or more) water

Combine ground beef, bread crumbs, egg, onion, salt, pepper and 1/4 cup soup in bowl; mix well. Shape into 6 miniature meat loaves. Brown in shortening in skillet; drain. Stir in remaining soup and water. Simmer, covered, for 20 minutes or until done to taste, stirring occasionally. Yield: 6 servings. (One pound of meat makes 4 loaves.)
