SWEDISH MEATBALLS 
2 lbs. ground chuck or round
2/3 c. packaged bread crumbs
1 can (10 1/2 oz.) condensed consomme
4 tsp. minced onion
2 tsp. salt
1/4 tsp. pepper
Fat or pure vegetable oil for frying
1 tbsp. flour
1 c. heavy cream
2 tbsp. chopped parsley

Combine ground beef, bread crumbs, consomme, onion, salt and pepper in a large bowl. Mix with spoon or hands until mixture is smooth, spongy mass; let stand at least 1/2 hour. Shape into small balls; fry in hot fat or oil in skillet until evenly browned. Shake pan during frying to keep balls round. Remove meatballs; keep hot.

Blend flour into pan drippings; stir in cream; bring to boiling; simmer about 5 minutes. Pour over meatballs; sprinkle with parsley. Serve at once. Makes 6 servings.
