BROCCOLI CHOWDER | |
2 lb. (about) fresh broccoli 2 (12 1/2 oz.) cans chicken broth (or homemade) 3 c. milk 1 c. chopped, cooked ham 2 tsp. salt 1/4 tsp. pepper 1 c. light cream 1/2 lb. Swiss cheese, grated 1/4 c. butter Cook broccoli, covered, in 1 can chicken broth in large kettle about 7 minutes. Remove and cool - chop coarsely. Add remaining broth, milk, ham, salt and pepper. Bring to boil over medium heat, stir occasionally. Stir in remaining ingredients and chopped broccoli; heat to serving temperature. Yield: 2 1/2 quarts. From a Holiday Grange Book. |
