VEGGIE STRATA 
3/4 lb. asparagus, in 1 inch pieces
3 c. shredded Swiss cheese
1 1/2 med. red bell pepper, chopped
1 1/2 tbsp. butter
1 med. onion, chopped
9 c. French or Vienna bread cubes
3 c. milk
6 eggs, beaten
1/2 tsp. paprika
1/2 tsp. salt

Twelve to twenty four hours before serving, assemble strata. Cook and stir asparagus and red pepper in butter over medium high heat about 2 minutes. Add onion and cook 1 minute. Lightly grease bottom and sides of a casserole. Place half the bread cubes in casserole. Top with half of the veggies and half the cheese. Repeat layers. Combine milk, eggs, paprika and salt. Pour over bread and veggies. Cover and refrigerate for twelve to twenty four hours. Bake in a 350 degree oven for 50 to 55 minutes, until golden brown.

Variation: Add slivers of cooked ham or chicken to the strata. Serves 12.
