POLISH LASAGNA 
1 qt. sauerkraut
1 onion
3/4 stick butter
1 can mushrooms
2 cans Cream of Mushroom soup
12 oz. curly noodles
1 lb. Polish sausage

Cover sauerkraut with water, bring to a boil and drain. Sauté diced onion in 3/4 stick butter.

Cut up sausage into 1/4" slices. Mix all the above together with the mushroom soup plus 1/2 can water. Layer curly noodles in a casserole dish. Add sauerkraut mixture.

Bake in oven for 40 to 45 minutes at 350°F.

Hi John,

My Grandmother was born in Sicily. Although she didn't always make her lasagna without cheese, she did have a version that she sometimes made using a white sauce with spinach. Yum!
