IRISH SODA BREAD | |
2 c. unsifted flour 1/2 tbsp. baking powder 1/2 tsp. baking soda 1 c. dark seedless raisins (optional) 3/4 c. buttermilk or sour milk 1 egg, beaten 1/2 c. sugar 1/2 tsp. salt 1/6 c. butter 1/2 tsp. caraway (optional) Blend together flour, sugar, baking powder, salt and baking soda. Cut in butter until mix resembles coarse meal. Add raisins, caraway seed, buttermilk and egg. Stir until blended. Knead on floured board until smooth, about 1 minute. Shape dough into ball and place in greased 8-inch round cake pan. Flatten to fill pan. Cut a deep cross in top of loaf. Serve with butter. |
