3 lbs. beef 2 lbs. suet 3 lbs. brown sugar 3 lbs. seedless raisins 2 lbs. currants 2 tbsp. each ground mace, nutmeg, cinnamon, cloves 12 lg. apples 2 lbs. citron (cut fine) 5 lemons, juice and grated rind 5 oranges, juice and grated rind 1 qt. liquid 3 c. cider Cover meat with water. Add 1 tablespoon salt. Simmer until tender. Cool in water in which it has been cooked. Chop meat fine. Pare, core and chop apples. Combine meat and apples. Add sugar, raisins, currants, citron, cider, fruit juices and rind, liquid and meat stock. Simmer slowly for 2 hours. Add 1 pound broken walnut meats. Pack in fruit jars or stone crock. Ripen before using. Liquid may be grape juice, wine or canned fruit juice or water. |
