COCONUT COLLARDS 
2 bunches collard greens
1 coconut
1/2 tsp. salt

Use 1 coconut for every 2 bunches of greens.

Clean, rinse, cut up the collards. Place in large pot. Crack coconut being careful not to spill the milk. Pour the sweet nectar of the coconut over the collars. Simmer until the greens are tender. Delicious and healthy. A southern dish made healthy.
